About Lovely Loaves

My career and education in bread making, artisan baking and teaching others.

On leaving school I started working for Morrisons supermarket as a trainee baker. During my training at Morrisons I also served a 3-year city and guilds bakery apprenticeship at Clarendon College, Nottingham. During my time at Clarendon I was awarded on three consecutive occasions The Master Bakers Cup of Bread Making. I felt in awe of all my bakery teachers at Clarendon and soon realised that my career was also to be in bakery training and education.

After leaving both Clarendon College and Morrisons I decided to continue my training at The National Bakery School at London South Bank University for an additional two years. During this time I worked part time in the bakery for Asda supermarkets and eventually managed to work my way up the ladder to bakery manager. I worked for Asda for approximately five years but always maintained close links with The National Bakery School as I knew that I wanted my career to be teaching bread making to others, rather than retail baking.

Eventually my dream job of being a university lecturer at The National Bakery School became available and I grabbed it with both hands. I spent the best part of 20 years teaching my craft to the next generation of up and coming bakers. During my time at The National Bakery School I taught degree level bread making but I also used to enjoy teaching confectionery, patisserie, basic cooking, product development and sour dough production. I was also involved in fund raising to enable the redevelopment of The National Bakery School and visited Tokyo, Japan and ran a week’s practical training and from this I have a book and a training DVD which have both been published.

My qualifications are based on bread making, craft baking, artisan baking and confectionery production.
